It is a recipe passed by my mother in-law as a Norwegian Christmas treat, and I decided to make them for Valentine’s Day as well. Considering the rest of the country is still freezing cold, this treat may bring warmth and love as well as necessary calories to combat the cold weather:-).

8 oz. Butter
8 oz. Sugar
3 large eggs
8 oz. Flour
2 teaspoons water
1 teaspoon Shredded lemon peel
2 teaspoons Crushed almonds
2 teaspoons Chopped raisins

Oven Temperature: 350, Bake Time: 25 min.

Large Bowl, soften butter, mix Sugar and Butter together.
Beat mixture till white and creamy.
Add eggs one at a time and beat well.
Gradually add flour and mix till mixture smooth.
Add water, mix well.
Add shredded lemon peel.
Fill baking cups 3/4 full with batter using a large sized teaspoon.
Batter renders 12 medium size, or 16 small size cupcakes.
Drizzle crushed almonds and chopped raisins on top of each cupcake.
Preheat oven to 350.
Place the pan in the middle of the oven, and bake for 25 min.
Remove pan from oven and leave cupcakes in pan for a few minutes.
Transfer to a cooling rack, and enjoy!
